4 easy & cheap vegetarian recipes you need to try!

Hi I’m Ruth from Ruth Writes and I love to cook. I mean, sure during lockdown it can get a bit tedious having to plan meals for yet another week, but having a lovely array of cookbooks on my kitchen shelf gets me through and makes the weekly food shop, just that little bit easier. 

Cooking is my favourite hobby, and if we remove the fact that it’s something that I’ve got to do daily, it still is a joy making a tasty meal from scratch. I’m also such a fan of meal planning. Having a rough idea of three or four meals you’re going to make each week means your food shop remains on budget and you’re reducing food waste too by eating the items you’ve bought rather than binning at the end of each week. 

The recipes I want to share with you today are all vegetarian and really easy to follow. I think the biggest thing that puts many of us off following a recipe is the sheer number of obscure ingredients we don’t all have at home, knocking round in the cupboard. The four recipes below 

I want to demonstrate that it is possible to easily follow recipes without a minor breakdown following suit. Here’s four recipes that I’ve enjoyed making and eating lately. Ideal if you’ve reached the point of deciding what to cook each night!

Pinch of Nom, Everyday Light – Keema Pie

I’m relatively new to the Pinch of Nom hype and if you are too, then this is the dealio in a nutshell. The brains behind Pinch of Nom are two female chefs who followed the Slimming World diet. They started a blog, an Instagram account followed and soon a mass of followers and a book deal was on the horizon. They have three books in total, but this is the second and the one with the most vegetarian recipes. 

Keema Pie was the third recipe I followed from the book. Simply subbing meat for quorn mince, it’s essentially an indian take on a shepherd’s pie. Easy to make, simple to follow and tastes amazing. Plus, any leftovers make an excellent lunch the day after!

Mob Kitchen, Mob Veggie – Spicy Coconut Lentil Dahl

Mob Veggie is one of my favourite cookbooks. It’s no-nonsense, really easy to follow and tastes amazing. If you’re partial to a curry but haven’t yet turned your hand at making a dahl, I urge you to do so. 

This recipe is both vegetarian and vegan and cost per serving, it’s a great budget-friendly option too. The ingredients are easy to find and it’s easy to make.

Mob Kitchen, Mob Veggie – Chickpea, Aubergine and Date Tagine

Another Mob Veggie recipe for you here. This was my first attempt at making a tagine and I loved it. Easy ingredients to find in the supermarket, really cheap to make per portion or if you’re cooking for two and healthy. 

It also kept really well in the fridge meaning we had leftovers for work-from-home lunches for the next day. Ideal if you’ve got cooking fatigue!

Joe Wicks, Veggie Lean in 15 – Thai Green Aubergine Curry

Another day, another lean in 15 recipe. Like him or loathe him, the Bodycoach’s recipes are easy to make and follow. 

It seems he’s quite the fan of supermarket hacks, aka microwave rice, ready chopped garlic etc meaning this one saves you time and is a one-pot dish too. Saving on washing up!
